Red Roses

How do I make sugar roses a really rich deep red? If I add red colour paste to the flower paste it doesn’t go dark enough, and if I add too much the sugar paste goes too soft?

Whenever you are making roses for a cake, always make more than you need.  Save the roses that are not up to scratch to use for testing and practicing different colour combinations.

For a deep red colour, start by adding some dark red colour paste to your sugar, and then when dusting, try using layers of ruby and aubergine.  Steam your roses and allow to dry for at least a day, and repeat until you have a deep enough colour.
