Meet Chef Peter Rios, the visionary behind Alliance Bakery & Café. With an extensive background as executive pastry chef at esteemed establishments, Chef Rios infuses his expertise into every creation. From his tenure at the Fairmont Hotel Chicago to his role at the Art Institute of Chicago, Chef Rios has adorned both plates and exhibits with his artistic pastry creations.
Chef Rios’ journey has taken him across continents, refining his craft in Europe’s renowned culinary capitals. He has imparted his expertise in international seminars and hands-on demonstrations, continuously elevating his skills. A graduate of Kendall College, Chef Rios remains a devoted student of the art of pastry, continuously expanding his repertoire at the French Pastry School Chicago.

We used Alliance Bakery for our wedding cake! We actually had 2 cakes- a bride's and a groom's. Stacy was great to work with! There was a lot of back and forth on size, tiers, flavors, etc, but she was patient as I slowly made up my mind. The tasting here was the yummiest out of the approx 4 bakeries we tried. I had been told by another bakery that it is standard to have a faux cutting cake with sheet cake in the back. This was not my preference and thankfully Alliance said their standard is to make the entire cake real! Everything turned out just the way we wanted
We were celebrating the release of my girlfriend's book, so I reached out to Alliance for a cake and sent over the book cover for inspiration. I thought the cake would just be the same color as the cover or screen-printed on — instead I got an incredible recreation of the entire cover in cake form! They were so creative and added all these thoughtful touches (like a 3D fondant pen!) that made the release party wonderfully special. Plus, it was delicious. Getting the quote was easy — I did all online, it was super transparent and easy to understand, and they got back to me in a timely fashion. Can't say enough good things about Alliance! 10/10 from start to finish
My mom loved her cake! I was extremely busy during the times I scheduled to drop off flowers and pick up the cake but the staff were courteous enough to call me, and extend the time to bring the flowers and hold the cake until the next day. The cake itself looked pretty and tasted good. Everyone at the gathering enjoyed it.
