Ingredients

  • 5 large egg whites
  • 1 ¼ cups (250g) granulated sugar
  • ¼ cup (60ml) water
  • 1 ½ cups (340g) unsalted butter, room temperature
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

 

  1. In a saucepan, heat sugar and water over medium heat until it reaches 240°F (116°C) on a candy thermometer.
  2. While syrup is heating, whip egg whites to soft peaks using a stand mixer.
  3. Slowly drizzle the hot syrup into the whipped egg whites while beating on medium speed.
  4. Increase speed to high and beat until the meringue is glossy and cool to the touch.
  5. Gradually add softened butter, one piece at a time, mixing until smooth.
  6. Mix in vanilla extract and salt. Use immediately or store in the fridge for up to a week.
