Whenever you are making sugar roses for a cake, always make more than you need. Save the roses that are not up to scratch to use for testing and practicing different colour combinations.
For a deep red colour, start by adding some dark red colour paste to your sugar, and then when dusting, try using layers of ruby and aubergine. Steam your roses and allow to dry for at least a day, and repeat until you have a deep enough colour.
